Hello everyone!

Last November I went on a magical trip to Finland and Lapland! While I was there I discovered some gorgeous recipes! I didn't write them down, just relied on the feeling I had when I sat down to taste them and what the scenery was like!!

In Helsinki, I was dining down by a harbour and I tried cream of mushroom soup for the first time! Now, normally, as I'm a little finnicky, I like fried mushrooms, but cream of mushroom didn't appeal to me!

It was freezing outside, snow was falling and frost everywhere, and my hands were cold! So, I said to myself, "try it!"... Oh my good God! It was beautiful! I did manage to recreate my own version when I came home to Ireland and it was lovely!

Then a few days later, I found myself on a plane from Helsinki to the Artic Circle, Rovaniemi. Stepping outside the airport, it was minus 17degrees, snow falling in abundance and the trees were frosted! It was like something out of a Christmas card. As we drove along the snowy highway, we could see the forests, tall trees and inbetween the the trunks of the treses were shy and curious reindeers.

A few days later, we had a mail with a traditional Lapp man and his family. They lived off the land, and fished in the icy waters. I will never forget what they served us, absolutely beautiful cream of salmon and fish soup.

So later on, after I try the apple crumble, I will post the recipes and maybe you might like to try them sometime!!
