Maria has sent her favourite menu for entertaining.  Maria says that she loves feeding people, whether they’re hungry or not. She writes a food blog called  mindingbellieswell.blogspot.com which she says she need to update badly but there is enough content for people to see what she is about as a foodie. She has won numerous recipe competitions (including an Observer Food Award last year for her chicken and pistachio curry recipe) and she also writes travel and restaurant reviews for Our Man On The Ground, a really nice travel and entertainment blog.

Starter

Seared Fillet of Beef with a Thai Vinagrette

Raspberry Creme Brulee

The seared Fillet of beef is first rolled in crushed peppercorns and marinaded in fish sauce and set aside for a couple of hours.  meanwhile cut the tomatoes and put them on a baking tray, drizzled with balsamic vinegar and salt and roast for an hour.  make the vinagrette by putting the ingredients into a jar with a screw on lid and shake thouroughly.  Now sear the beef and wrap in foil and bake for 10 minutes and set aside – let all the juices come out and pour them into the vinaigrette and mix.

To serve put the cos leaves on a plate, slice the beef finely and arrange the tomatoes and finely sliced onion and sprinkle with chili – drizzle over the vinaigrette just before serving.

The baked lobster is easy – You can obviously bake it at home from scratch but this recipe takes a cooked lobster and then you cut in half and remove the flesh.  Mix the butter, tarragon and lemon together and spread over the base of the lobster before adding the flesh back into the shell. Put some small knobs of butter on the top and bake for 15 minutes and then serve with fat chips and homemade mayonnaise!

For dessert Maria has chosen a raspberry creme brulee – place some raspberries on the base of the ramekin dishes.  Then heat up the double cream and mix in the other ingredients and cook in a bain-marie.  When this is cooked leave to cool and then sprinkle brown sugar on the top and caramalise under a grill.  This is then left in the fridge to set hard and decorated with raspberries on top.
