With St George’s Day coming up this week – we wanted to select one of my favourite member’s for a British dinner party menu – He started on MyDish as Astrochef and then “came out” and revealed his true identity – John H Glen who used to work for Lord and Lady Hanson.

This English themed dinner is for a more special occasions.

Starter

Chicken Liver Mousse

Pears in Red Wine

The Chicken Liver Mousse is made with mushrooms and shallots and a lot of seasoning and can be made in advance which is always important to me when having a dinner party.

Partridge is a stocky type of game and is best cooked and served pink- not rare.  This dish is pan fired and then you add stock, red wine and red current jelly to the pan to make the sauce.   It is best served on top of creamed leeks with black Pudding and rosti potatoes.

As John says this is a “simple yet stylish dessert” it is one of his favourites and “a jolly good way to end a meal”  Pears in Red wine is made by heating the red wine with cinnamon sticks,  vanilla, lemon zest, cloves and some very good cointreau.  The pears are then slow boiled in the juice for at least an hour and left to cool.  Another dish that can be made in advance and served either warm or cold with whipped cream, old fashioned vanilla ice-cream or creme fraiche.
