Question

Hi, Four Rhodes Island Red hens have just joined our family, and I'm happy to say we're enjoying about 4 eggs a day! I'm desperate for some family friendly/super speedy ways to use them besides the egg custard, pavlova and scambled versions we've already tried. In particular has anyone got a tried and tested recipe for tortilla? Thanks

Have you looked at the Spanish Tortilla recipe added by Noaa on May 9, 2008. It uses 6 eggs and looks fantastic. I think it is worth a try. Aren't you lucky to have those hens! Kitchen Angel

I agree Noa's tortilla recipes looks great ( http://www.mydish.co.uk/recipe/1098/spanish_tortilla) but what about eggs benedict, quick and easy and a great weekend brunch (http://www.mydish.co.uk/recipe/943/eggs_benedict_by_helgs), or Kenny's spanish Omlette. Perhaps the kids favourite chocolate mousse(http://www.mydish.co.uk/recipe/418/chocolate_mousse_by_carolsavage) or just chuck them hard bolied into a salad (nicoise). My partner Mark's favourite is beans on toast with a poached egg on top!! Does that help!
