The Story Behind The Recipe

The shortbread biscuit is probably one of the best known cookies in the world. Mama Cookie Monster used to make this as far back as I can remember. In fact it was brought to the USA by my Great Great Grandma “McTavish” Cookie Monster when she came over from Scotland all those years ago. Apparently in those days they used to make the shortbread with oatmeal as instead of rice flour to give it more texture. The best thing about this cookie is that the butter gives it its rich flavor as well as its amazing crumbly texture. On my Cookie Monster scale of “Fabulous Biscuits” I give this 9 out of 10.
