The Story Behind The Recipe
My mum created this recipe. She would often discover the cornflakes had gone a bit soft because one of us kids had left the packet open! So she would spread the cornflakes on a baking tray and crispen them up in the oven.
This proved to be so tasty that we started cooking them in the frying pan to speed up the process - and the addition of a little butter or margarine just added a little extra savoury note.
Very soon, the cornflakes weren''t in the packet long enough to go soft!
The addition of a fried egg on top - particularly an egg with a runny yolk, makes this dish into quite a satisfying breakfast or brunch dish.
Some people turn their noses up when I mention fried cornflakes, but just try it - do your tastebuds a favour!!!
