The Story Behind The Recipe
I have adapted this recipe over the last 10 years from a fail proof cake recipe I learnt whilst doing a ski season as a chalet maid in the French Alps. I LOVE cake but just couldn''''t be bothered with the original recipies which you had to measure out on kitchen scales, beat ingredients in a certain order and then risk the cake burning or sinking in the middle. This recipe is sink proof EVERY time - even at 3000ft! Using the yogurt pot for measuring is quick and simple and you could even put the whole recipe in the food processor to mix and the result would be the same - so the perfect cake cheats recipe. Using oil is a better fat to use for cooking than butter as it has no poly unsaturated fat therefore better for you! And I have a love for whole grains, so have adapted the original recipe from white flour and white sugar to use wholemeal flour and dark brown sugar. I experimented with seeds, fruits and flavours, so you can too - as long as you stick to the 1 x yog, 1 x oil, 2 x sugar, 3 x flour, 3 x eggs and 1 tsp baking powder basics. So experiment with chocolate, lemon, chocolate chips - anything!
