Preheat the oven to 220C/gas 7. Put 2 chopped red onions, 3 chopped courgettes and 4 garlic cloves in an ovenproof dish.
Drizzle over 3tbsp olive oil, season and roast for 15 mins. Add 250g cherry tomatoes and roast for 15 mins.
Cook 300g pasta shapes. Squeeze the garlic cloves out of their skins, mash and stir through the veg. Tip in the drained pasta, add torn basil and pine nuts and serve.
