Method

  • Sponge base:

  • *Cream the butter.
  • *mix in sugar.
  • *Whisk in egg.
  • *Mix self raising flour in a bit at a time.
  • *Pour into cup cake molds. Bake for about 20 mins at 150 D.
  • *Once cooked and cooled, cut out a circle from the middle and fill with jam. You can use any flavour you like but I like using strawberry.

  • Meringue nests:

  • *Whisk the eggs whites.
  • *Mix in the fine sugar a bit at a time.
  • *Whisk this with an electric whisk until its smooth and gloosy, and makes stiff peeks. You should be able to hold the bolw over your head without the content falling on your face.
  • *Then cover the cake bases with the uncooked meringues, the aim is to make lots of little messy peeks and swirls, so it looks like a birds nest.

  • You can eat it as it is, its just as yummy but a bit messy. If you want to to cook them, place them in an oven at 150 D until they go hard or until the tops of the peeks turn golden brown.

    • 4 oz very fine sugar
    • 4 oz butter or margarine
    • 1 large egg
    •  Jam of your choice
    •  
    • MERINGUE
    • 8 - 10 oz white sugar
    • 3 eggs whites
