Method

  • 1. Heat the butter and oil in a large pan and gently fry the onions for about 10 mins until soft and transparent.

  • 2. Sprinkle in flour and cook for a minute.

  • 3. Add the stock a little at a time and bring to the boil, stirring until thickenend.

  • 4. Wash the watercress and reserve a few leaves as a garnish just before serving.

  • 5. Add the watercress to the pan with the seasoning.

  • 6. Bring back to the boil cover and simmer for about 5 minutes.

  • 7. Puree the soup then return to the pan. Blend in milk. Slowly bring back to the boil, stirring.

  • 8. Serve with a few watercress leaves on top.

    • 2 oz Butter
    • 2 tbls Sunflower oil
    • 2 Large onions chopped
    • 3 tbls Flour
    • 2 Pints Vegetable stock
    • 4 Packets of watercress
    • To taste Salt and black pepper
    • 1 Pint Milk
