1. Heat the butter and oil in a large pan and gently fry the onions for about 10 mins until soft and transparent.
2. Sprinkle in flour and cook for a minute.
3. Add the stock a little at a time and bring to the boil, stirring until thickenend.
4. Wash the watercress and reserve a few leaves as a garnish just before serving.
5. Add the watercress to the pan with the seasoning.
6. Bring back to the boil cover and simmer for about 5 minutes.
7. Puree the soup then return to the pan. Blend in milk. Slowly bring back to the boil, stirring.
8. Serve with a few watercress leaves on top.
