Tony's Brie and Tomato Tart

Method

  • Preheat oven to Gas Mark 6.
  • Roll out the pastry to be 9 x 12in oblong.
  • Score the pastry.
  • Cut the courgettes finely and fry in oil for 2 minutes - then add oregano and fry for a further minute.
  • Then simply layer the brie, tomatoe and courgettes onto the pastry so they appear as stripes.
  • Drizzle over the juice from frying and bake for 30 minutes.
  • Serve warm with a good helping of basil to top.
  • Enjoy :)

    • 9oz puff pastry
    • 8oz Brie
    • 5 large ripe tomatoes
    • 8oz courgettes
    • ½ tsp dried oregano
    • handfull Fresh Basil Leaves
