crumble the digestives, melt the butter, mix the crumbled digestives into the melted butter, place the digestives and butter mixture into a 9" by 2" high flan dish, pat the mixture into the dish and then place in the fridge for 30mins, whip the cream with the sugar and vanilla essence, grate the wensleydale cheese with cranberries, fold the grated cheese and the cream cheese into the whipped cream, place the mixture on top of the digestive biscuit base and put back in the fridge for another 30mins to set.
