Stir-fried Seafood with Noodles

- Having a bag of frozen seafood and vegetables in the freezer is always a great standby for an emergancy instant supper.
Ingredients
- 300g dried medium egg noodles
- 4 tbsp olive oil
- 2 Red peppers, seeded and thinly sliced
- 4 leeks, thinly sliced
- 2 large onions, peeled and cut into thick wedges
- 300g cherry tomatoes. halved
- 4 garlic cloves, peeled and thinly chopped
- 400g mixed seafood
- A few sprigs coriander
- 4 tsp Balsamic Vinegar
- ground black pepper & salt
