Banana and Cinnamon Muffins (butter / oil free!)

Method

  • Preheat oven to 180 degrees C. Line a muffin tin with 6 paper or silicone cases.
  • Sift the flour, baking powder and cinnamon into a bowl, adding any bran left in the sieve. Stir in the sugar. Mash the banana with the milk, and lightly beat the egg with a fork, then add both of these into the bowl and mix well to combine.
  • Divide the mixture between the cases and bake for 15 – 20 minutes until risen and springy to touch – if you want to you can double check by inserting a skewer – ready when it comes out clean.
  • Tips

    • These keep well in an airtight tin for a few days, if needed, and also freeze well. I love them warm straight from the oven as well!

    • 125 g Plain flour (spelt, wholemeal or white - as you prefer)
    • 1 tsp Baking powder
    • ½ tsp Ground cinnamon
    • 70 g Light brown sugar (normal or muscovado)
    • 1 Ripe banana
    • 2 tbsp Milk (any kind)
    • 1 egg
