Method

  • Heat the oven up on Gas mark 6

  • Place a little olive oil and seasoning on the Red Pepper cut in two and place in oven for 30/40 Mins until roasted

  • While the pepper is roasting heat a little olive oil in a pan and fry the courgettes and shallots until soft but not too brown.

  • Remove the pepper and fill with the courgette and shallot mixture, top each pepper with a layer of tuna

  • Place under the Grill for ten mins

  • Remove and top with a sprinkle of Basil and a drizzle of Olive Oil and Balsamic vinegar.

    • 4 tblsp olive oil
    • to taste salt and pepper
    • 1  red pepper, large
    • 2 courgettes
    • 4 shallots
    • 1 tin tuna
    • bunch basil, fresh
    • to taste Balsamic vinegar
