Method
Heat the oven up on Gas mark 6
Place a little olive oil and seasoning on the Red Pepper cut in two and place in oven for 30/40 Mins until roasted
While the pepper is roasting heat a little olive oil in a pan and fry the courgettes and shallots until soft but not too brown.
Remove the pepper and fill with the courgette and shallot mixture, top each pepper with a layer of tuna
Place under the Grill for ten mins
Remove and top with a sprinkle of Basil and a drizzle of Olive Oil and Balsamic vinegar.

- 1 red pepper, large
- 2 courgettes
- 4 shallots
- 1 tin tuna
- bunch basil, fresh
- to taste Balsamic vinegar
