Yum Yum Chicken

The Basics

Ingredients

  • 75g vermicelli rice noodles
  • 8 large leaves lettuce leaves
  • 1 tablespoon sesame oil
  • 250g chicken breast
  • 4 tablespoons soy sauce
  • 1 tablespoon fish sauce (nam pla)
  • 2 tablespoons oil
  • 1 teaspoon lemon grass powder
  • 1 garlic clove finely chopped
  • 2cm piece fresh ginger peeled and finely chopped
  • 1 red chilli finely chopped
  • 5 spring onions
  • a few sprigs corriander and/or mint

Method

Slice the chicken into thin slices length wise,
place in a bowl and marinate with the soy sauce, the fish sauce, lemon grass, garlic, ginger and chilli. Cover and refridgerate for about 30 mins.
Slice 4 of the onions into 5cm long strips and chop the remaining one finely. Cook the noodles according to packet instuctions.
For the sauce, mix the remining soy sauce with the finely chopped onion and sesame oil and combine this with the noodles.
Arrange this mixture with the spring onions, lettuce and sprigs of coriander and/or mint and place on a plate.
Pre-heat a grill, grill pan or barbecue. Grill the chicken strips for about 3 mins until cooked and golden, allow them to cool slightly before serving them ontop of the lettuce and noodles.Yum Yum Chicken!!!

Fab recipe - am going to try it out on Saturday when I've got people for dinner just want to check out how much soy sauce should be used for the marinade and how much needs to be left for the sauce.
Oh and by the way have you got a picture of what it looks like?
