Method

  • Crush the biscuits. Melt the butter and mix it into the crumbs. Press into the bottom of a springform mould and bake in a moderately hot oven 170C for 10 minutes.

  • Work the cheese with the castar sugar. Break up the chocolate and melt it on a plate over hot water. Add this to the cheese with the yolks of the eggs and the vanilla essence.

  • Whip the white and beat in the other 2oz of sugar by degrees. Fold into the chocolate mixture, then whip the cream lightly and fold this in also.

  • Turn this mixture into the spring form mould. Chill. To serve turn out and decorate with whipped cream and maltesers.

    • 6 oz chocolate nut cookies
    • 3 oz butter
    • 8 oz philidelphia
    • 2-3 oz caster sugar
    • 6 oz dark chocolate (>75% cocoa)
    • 2 large eggs
    • a few drops vanilla essence
    • 2 oz sugar
    • ½ pint double cream

    This is my favourite pudding of all time. I loved it so much that I used to have it as my birthday cake. It's not a quick recipe but it's good and it can be frozen!
