Crush the biscuits. Melt the butter and mix it into the crumbs. Press into the bottom of a springform mould and bake in a moderately hot oven 170C for 10 minutes.
Work the cheese with the castar sugar. Break up the chocolate and melt it on a plate over hot water. Add this to the cheese with the yolks of the eggs and the vanilla essence.
Whip the white and beat in the other 2oz of sugar by degrees. Fold into the chocolate mixture, then whip the cream lightly and fold this in also.
Turn this mixture into the spring form mould. Chill. To serve turn out and decorate with whipped cream and maltesers.
This is my favourite pudding of all time. I loved it so much that I used to have it as my birthday cake. It's not a quick recipe but it's good and it can be frozen!
