Method
Ingredients
- 1 Onion - roughly chopped
- 1 tbsp Ginger - Fresh & Chopped
- 1 tbsp Galangal - chopped
- 1 tbsp garlic clove - chopped
- 1 lemongrass stalks. finely sliced
- 1 tsp Turmeric powder
- 6 Red dried Chillis - soaked and chopped
- 2 tbsp Sunflower oil
- 1 Cinnamon stick
- 6 Cardamon pods
- 650 g / 1lb 7oz Braising or Stewing Steak - cubed
- 4 kaffir lime leaves
- 400 ml / 14 Floz Coconut Milk
- Zest 1 Lime
- 1 tbsp Tamarind paste
- 50g / 2oz Desicated Coconut
- 2 Corriander sprigs to garnish
- HERBY RICE
- 1 tbsp Sunflower Oil
- 1 Cinnamon Stick
- 4 Cardamon Pods
- 250g / 9oz Basmati Rice
- 600ml / 1pt Water
- 2 tbsp Chopped, Fresh Corriander
- Sea Salt
- TO SERVE
- Deep fried Shallots
- Deep fried Red Chillis
