Healthy(er) Onion Bhajis

Method

  • 1. Drizzle olive oil in to a pan and add onions. Cook until they go soft and translucent.

  • 2. Add chilli powder from first list and mix well. Add remainder of first list and mix well. Turn off heat.

  • 3. In a large bowl place gram flour and add second list and mix well.

  • 4. Add onions and combine with the flour mix. In a smaller bowl place the tomato puree and water and mix. Add the tomato mixture to the onions. The mixture should be wet and easy to stir but not too easy. Add more gram flour to stiffen or water to slacken as desired.

  • 4. Oil a baking sheet. Place a 2 tablespoon amount on the sheet and press flat with the back of the spoon. Make as many of these patties as the mixture allows.

  • 5. Bake in a pre-heated oven at 180ºC for 10 minutes. Drizzle olive oil over top of bhajis and bake for a further 10-15 minutes.

  • 6. Allow to cool and then try to eat just one!

    • 10 Onions, sliced
    • 10 tbsp Gram flour
    • ADD FIRST LIST
    • 1 tsp Turmeric powder
    • 1 tsp Ground Coriander
    • ½ tsp cumin powder
    • ½ ginger powder
    • ½ tso chilli powder
    • ADD SECOND LIST
    • 1 tsp salt
    • 1 tsp Cumin seeds
    • 1 tsp Dried Coriander
    • OTHER INGREDIENTS
    • 2 tbsp olive oil
    • 2 tbsp Tomato Puree (Paste)
    • 3 egg cups water

    It is so easy and because the bhajis are oven-baked they are much healthier than the deep fried variety. Everyone who tries them loves them and leaves with a copy of the recipe.
