Method

  • Into a large pot put the water,chopped or minced lamb and brown lentils. Boil for approx. 1/2 hour.
  • Put the onion and celery into a food processor and chop up to small bits. Add to the soup.
  • Put the Passata and both bunches of herbs into a blender, add a cup of water then blend together. Add this mixture to the soup.
  • Add the cinnamon, ginger, turmeric and paprika. Simmer for another 1/2 hour.
  • Add the Bulgar Wheat, simmer for 10 minutes then add the angel hair pasta (break into small pieces if using the long strands). Add the salt and pepper. Simmer for another 10 minutes.
  • beat the lemon juice into the egg and the very slowly add to the boiling soup stiring all the time. Simmer for 2 minutes. taste and adjust seasoning as required. Add more Paprika if you like it very spicy
  • Tips

    • If you like it you can garnish with chopped Cilantro (Celery leaves) or a wedge of lemon

    • 1 bunch fresh parsley
    • 2 celery sticks
    • 1 large onion
    • 1 tsp ground ginger
    • 2 tsp cinnamon powder
    • 1 tsp Hot Paprika
    • 1 tsp Turmeric powder
    • 1 cup Bulgar wheat
    • 2 oz angel hair pasta
    • 1 egg beaten
    • 1 tbls lemon juice

    This soup will serve approx. 10 people. Sorry, don't know how to make it less!! It does keep well and can be used over 2 or 3 days. Or just invite over a lot of friends :-)
