Cinnamon Balls

Method

  • 1. Beat the whites until they form stiff peaks.

  • 2. Stir in all the other ingredients, mixing until evenly coloured.

  • 3. Form into balls with damp hands.

  • 4. Heat oven to 160o and bake on a greased tray for 20 minutes or until soft to the touch. Take care not to overcook.

  • 5. Roll in icing sugar whilst warm then again when cold.

  • Should make between 18 - 20.

    • 2 Egg Whites
    • 4 oz Caster Sugar
    • 8 oz Ground Almonds
    • 1 Level Tbsp Cinnamon

    A must have over Pesach - equally delicious however any time of the year. Best made so the inside stays soft and moist.
