Heat oven to 180 C. Grease and line a cake tin or pirex dish.
Put the butter, brown & caster sugar, mixed spice and egg into a bowl and whisk together (an electric whisk is best) slowly add the flour and milk alternately keep wisking.
Add the chopped apples and sultanas. Should be a gooey, dropping consistency. If too stiff add a drop more milk.
Pour into baking dish. Sprinkle with Demerera sugar. Bake for approx 1 hour to 1-1/4 hours.
