Dutch Apple Cake

Method

  • Heat oven to 180 C. Grease and line a cake tin or pirex dish.
  • Put the butter, brown & caster sugar, mixed spice and egg into a bowl and whisk together (an electric whisk is best) slowly add the flour and milk alternately keep wisking.
  • Add the chopped apples and sultanas. Should be a gooey, dropping consistency. If too stiff add a drop more milk.
  • Pour into baking dish. Sprinkle with Demerera sugar. Bake for approx 1 hour to 1-1/4 hours.
  • Serve hot with custard or cold as a cake

    • 2 cooking apples. peeled. cored and sliced
    • 4 oz sultanas
    • 6 oz butter. softened
    • 12 oz self raising flour
    • 2 tsp mixed spice
    • 4 oz brown sugar
    • 2 oz caster sugar
    • ΒΌ pint milk
    • 1 egg beaten
    • 2 oz demerara sugar

    I like the bite size chunks of apple in this cake. It's nice cold or warm with custard
