Mini frangipane tarts

Tips
- Also good with other jams (e.g. apricot works really well), or with mincemeat at Christmas - a lovely alternative to a traditional mince pie.
Use shop-bought pastry if you prefer, or are pushed for time - approx. 300 g.
Ingredients
- FOR THE SWEET PASTRY
- 150 g Plain white flour
- 85 g Unsalted butter (cold, cut into cubes)
- 25 g Caster sugar (normal or golden)
- 1 Egg yolk
- Approx. 1 - 2 tbsp Cold water
- FOR THE FILLING
- 100 g Unsalted butter, softened
- 100 g Caster sugar (normal or golden)
- 100 g Ground almonds
- 25 g Plain flour
- 1 Egg. lightly beaten
- 1 tbsp Brandy or Amaretto (optional)
- ½ tsp Almond extract (instead of alcohol, but also optional)
- Approx. 1/3 jar Raspberry jam
- 15 - 20 g Flaked almonds
- For dusting Icing sugar
