Roll out your pastry into an oblong. Spread the pastry with sugar free jam. Sprinkle with raisins and lightly sprinkle with cinnamon. Starting at the long ends of the rectangle, loosely roll the pastry inward until they meet at the middle. It the pastry wont hold paint on a little beaten egg. Slice the pastry crosswise into 1/4" palmiers, they look like little scrolls. Arrange them on a baking sheet lined with parchment paper. Paint them with egg and sprinkle a little sugar (if you wish) over them (it makes them lovely and crunchy). Put them in the oven on 400 or gas mark 6 for 12 to 15 mins when they should have puffed up and turned golden brown. Serve them hot or at room temperature. You can make these in all different flavours, use this basic recipe and add chopped nuts, use mincemeat at Christmas or turn them into savouries
Just tried these and yes very quick and easy.One 500g block of puff pastry does enough for two baking trays which is just as well as I dropped one while turning the tray round half way through!!!!One tip though,unless using a fan oven which I stupidly did'nt do,then don't pack them to close to each other so maybe you'll need three trays.I will be making these again!
