Ingredients

  • 1 large onion (finely chopped)
  • 4 eggs
  • 1 red bell pepper
  • 6 medium tomatoes
  • To taste salt
  • To taste papper
  • To taste chilli
  • 1 minced garlic clove
  • 2 tbsp Olive Oil

Method

In a large frying pan, saute onion until lightly browned.
Peel the tomatoes and chope into big cube slices and add it to the onion, cover and cook over low heat for 25 minutes. Remove cover and break eggs over the surface. Stir gently to break yolks, cover and cook for about 3 or 4 minutes until eggs are set. Season with salt,pepper and dried chilli.
