Method

  • 1) dice the vegtables and parsley.
  • 2) mix the vegetables with the lemon juice and oil.
  • 3) season with salt to taste.
  • Tips

    • serve on its own as a light salad or with a peace of toast with a little chilli sause spread and fish marinaded in tumeric and grilled.
      Or serve it as if it were a dip

    Ingredients

    • 1 large cucumber
    • 1 large Tomato
    • 1 large onion
    • small handful Parsley
    • ΒΌ cup lemon juice (to taste)
    • 1-2 tbsp olive oil (optional)
    • a pinch of salt
