1. Beat eggs and sugar until creamy.
2. Stir in lemon juice, rind and coconut.
3. Form into pyramids. If the mixture seems too soft to hold its shape, stir in a little more coconut.
4. Bake 190oC for 18-20 mins until tinged with golden brown. Take care not to overcook as these should be slightly moist inside and crunchy on the outside.
