Method

  • 1. Soak raisins in boiling water for 5 mins then drain.

  • 2. Preheat oven to 180oC. Grease an 8" square tin (needs to be about 3" deep)

  • 3. Break up matzot and pour COLD water over them and leave for about 10 mins.

  • 4. Drain Matzot well and then beat with a fork until smooth.

  • 5. Peel apple and grate coarsely.

  • 6. Whisk eggs until thick.

  • 7. Add all the ingredients to the smooth Matzot except the margarine and granulated sugar in the order given beating well each time.

  • 8. Stir in half the melted margarine and turn into your chosen tin.

  • 9. Drizzle the remaining margarine over the top and sprinkle with the granulated sugar.

  • 10. Bake for about 1 hour or until a knife inserted in the centre comes out clean.

    • 4 Matzot
    • 6 oz Raisins
    • 3oz Caster Sugar
    • 1½ Tsp Cinnamon
    • 1 Tbsp Apricot Jam or Marmalade
    • ½ Lemon Juice and Rind
    • 3 Eggs
    • 2 Tbsp Matzah Cake Meal
    • 3oz Melted Margarine
    • 1 Tbsp Granulated Sugar
    • 1 Cooking Apple

    A delicious Passover dessert which is sooo easy to make. My family love it hot or cold.
