Matzah Pudding

Ingredients

  • 4 Matzot
  • 6 oz Raisins
  • 3oz Caster Sugar
  • 1½ Tsp Cinnamon
  • 1 Tbsp Apricot Jam or Marmalade
  • ½ Lemon Juice and Rind
  • 3  Eggs
  • 2 Tbsp Matzah Cake Meal
  • 3oz Melted Margarine
  • 1 Tbsp Granulated Sugar
  •  
  • 1 Cooking Apple

Method

1. Soak raisins in boiling water for 5 mins then drain.

2. Preheat oven to 180oC. Grease an 8" square tin (needs to be about 3" deep)

3. Break up matzot and pour COLD water over them and leave for about 10 mins.

4. Drain Matzot well and then beat with a fork until smooth.

5. Peel apple and grate coarsely.

6. Whisk eggs until thick.

7. Add all the ingredients to the smooth Matzot except the margarine and granulated sugar in the order given beating well each time.

8. Stir in half the melted margarine and turn into your chosen tin.

9. Drizzle the remaining margarine over the top and sprinkle with the granulated sugar.

10. Bake for about 1 hour or until a knife inserted in the centre comes out clean.
