Tandoori Salmon Fillets

Method

  • 1.Pre-heat the oven to 200°C, 400°F, gas mark 6.

  • 2. Mix the Patak's Tandoori Curry Paste, breadcrumbs, oats, parsley and lemon zest.

  • 3. Coat the salmon fillets with the crust mixture,than place them in a oven dish.

  • 4. Roast for 20 minutes, covering with foil after the first 10 minutes. Cook the lemons with the salmon for the final 10 minutes to soften them.

  • 5. Cook the Basmati Rice.

  • 6. Transfer the cooked rice to a large saucepan, stir in the spinach and cook for couple of minutes.

    • 3 tbsp. Patak's Tandoori Curry Paste
    • 50g Breadcrumbs
    • 25g Oats
    • 2 tbsp. Fresh parsley, chopped
    • 0.5 tsp. Lemon zest
    • 2 Lemons, halved
    • 4 Salmon fillet
    • 2 cups Basmati Rice
    • 250g Baby spinach leaves
