Sausages with Balsamic Roasted Red Vegetables

Method

  • 1. Pre heat oven to 200 deg c.
  • 2. Put onions and peppers in a roasting tin, drizzle over olive oil and balsamic vinegar and season well. Roast for 10 minutes.
  • 3. Remove from oven, add sausages, tomatoes and thyme, drizzle honey over mixture, stir well.
  • 4. Return to oven and cook for a further 35 minutes or so, turning mixture a couple of times until sausages are cooked.
  • 5. Serve with crusty bread or mustard mash.
  • Tips

    • This dish can be enjoyed by vegetarians simply by using vegetarian sausages.

    Ingredients

    • 3 red peppers quartered and deseeded
    • 3 medium red onions peeled and cut in to wedges
    • 250 grms cherry tomatoes
    • 3 - 4 sprigs fresh thyme
    • 2 tbsp olive oil
    • 2 tbsp Balsamic Vinegar
    • 1 tbsp Clear. Runny Honey
    • 8 sausages of your choice
