Method

  • Pre-heat the oven to 200C/400F/gas mark 6.Grease and line 6 mini loaf tins (5cm x 7cm x 5cm) or 8 deep muffin tins. Sieve together the flour, salt and baking powder in a large bowl. Stir in the cranberries and sugar.
  • Beat the egg in a bowl with the Alpro soya milk and oil. Add the egg mix to the dry ingredients and mix together. Do not overbeat.
  • Fill each tin with the mixture and bake for 25 - 30 minutes until well risen and golden brown.
  • Ingredients

    • 125g Self raising flour
    • ½ tsp Salt
    • 2 tsp Baking powder
    • 75g Dried cranberries
    • 40g Soft brown sugar
    • 1 Egg
    • 275ml Alpro soya alternative to milk
    • 4 tbsp Cooking oil
