Pre-heat the oven to 200C/400F/gas mark 6.Grease and line 6 mini loaf tins (5cm x 7cm x 5cm) or 8 deep muffin tins. Sieve together the flour, salt and baking powder in a large bowl. Stir in the cranberries and sugar.
Beat the egg in a bowl with the Alpro soya milk and oil. Add the egg mix to the dry ingredients and mix together. Do not overbeat.
Fill each tin with the mixture and bake for 25 - 30 minutes until well risen and golden brown.
