Steamed Mussels with Fyne Ales Highlander Beer and Arran Mustard

Method

  • -place a large saucepan on the stove; add the highlander beer, shallots and garlic, place on a moderate heat
  • -add the Loch Fyne mussels, bay leaf, oregano and cover with a lid
  • -as soon as the mussels open add the cream, black pepper and chopped parsley, replace the lid
  • -shake the pan and allow to boil for a couple of minutes more
  • - check the seasoning, add the Arran mustard, lime juice and zest, stir well
  • To serve, immediately!
  • Divide the mussels into large bowls evenly, pouring over the hot broth
  • Accompany with chunks of crusty bread and or bowls of chips!

    • 2kg Fresh Loch Fyne Mussels, scraped & cleaned
    • 2 Shallots peeled and finely chopped
    • 1 Clove garlic peeled and chopped
    • 150ml Highlander ale
    • 1 Fresh or dried bay leaf
    • 175ml Double cream
    • 30gms  Arran mustard
    • ½ Lime juice and zest
