Baked Pineapple with Rum

Ingredients

  • Large ripe pineapple
  • 3 tbsp dark rum
  • 4 tbsp soft brown sugar
  • 2 tbsp salted butter

Method

Pre-heat the oven to 350 F (180 C). Wash the pineapple. Peel it with a sharp knife, removing all the little brown eyes with the point. Cut the pineapple into rounds about 1/2 inch thick on plate to catch the pineapple juice. Arrange the pineapple in a large ovenproof dish. Pour over the pineapple juice. Sprinkle with rum and brown sugar. Dot with butter. Bake for about 1 hour, basting occasionally with the liquid in the bottom of the dish. When the pineapple is ready the sliced edges should be slightly browned. Serve warm accompanied by a little double cream.
