Lamb Chops with Gruyere and Herbs

Method

  • Cooking time: 1-1/4 hours Oven temperature: 160 degrees C (325 degrees F)

  • 1. Lightly grease a frying pan and fry lamb until browned on each side but not cooked through.

  • 2. Place each chop 10 inch square of foil.

  • 3. Drain fat from pan, add butter, onion and garlic and fry gently until onion is soft.

  • 4. Remove from pan with a slotted spoon and palce on top of meat, leaving butter in pan.

  • 5. Place 2 slices of potato on each chop and brush with melted butter from pan.

  • 6. Top with slices of tomato and sprinkle lightly with oregano.

  • 7. Lastly place a slice of cheese on top and fold foil, using double folds to seal each package completely.

  • 8. Place close together in a baking dish (cheese uppermost) and cook in a moderately slow oven (160oC) for 1-1/2 hours.

  • 9. Place packages directly onto individual plates. Best served with a simple tossed green salad.

    • 6 Lamb Chops
    • ¼ Cup Butter
    • 1 Large Onion thinly sliced
    • 3 Cloves Garlic finely chopped
    • 4 Medium Tomatoes
    • 12 Thick Slices of Potato
    •  Oregano
    •  Salt and Pepper
    • 125g Sliced Gruyere Cheese
