Chop the onion and garlic as small as you can and add to a blender with the ketchup and cider vinegar, blend until you have a smooth paste. Then add to a heavy bottomed pan and add all other ingredients. Warm slowly, you dont want to boil it just combine the flavours and liquidate the sugar etc... Once done you can jar it up or add to some slow cooked Pork or Beef. Use on a BBQ anything you like...

We went to New York in December and had some awesome food - but BBQ pulled pork from Spankys near times square was AWESOME and was teh inspiration behind creating something we could make at home...
Play with the ingredients to get a flavour that suits you - i quite like the tomato tang to this but reduce that or the vinegar if its too sharp - also play with the paprika - sweet smokey etc and if you can find it try adding some liquid smoke.....
