Mocha Pie with Baileys

The Basics

Ingredients

  • 2oz light muscovado sugar
  • 3oz unsalted butter
  • 1oz Golden syrup
  • 1 large egg
  • 1 large egg yolk
  • 2 tablespoons self raising flour
  • 2 tablespoons instant coffee dissolved in 1 tablespoon boiling water
  • 1 tablespoon Baileys Liqueur
  • 7oz digestive biscuits crushed (for base)
  • 3oz unsalted melted butter softened (for base)

Method

Preheat the oven to 190oC, gas mark 5.
Combine the crushed digestives and melted butter. Press the crumb mixture into the base, and up the sides of a 20cm (8inch)loose-bottomed, shallow flat tin. Chill for at least 30 mins.
Cream together the butter and sugar and add golden syrup. Seperate the whole egg. Gradually beat the yolks. Fold in the flour, followed by the coffee and the baileys. Whisk the egg white until stiff and fold it in (dont worry if the mixture curdles).
Pour this into the crumb case and bake in the oven for 15 mins, or until the filling is just set.
melt the chocolate and cream in abowl over a pan of hot, but not boiling water. Stir until smooth and pour this over the tart while is still warm.Spread it over the pie surface.
