1.Heat olive oil in the bottom of large saucepan.
2. Add peeled, thinly sliced carrots,onions and garlic, fry gently for 5 minutes.
3. Add dried powdered coriander and bunch of fresh coriander.
4. Add stock and boiling water from boiled kettle to cover. Bring to boil.
5. Simmer for 45minutes until all vegetables are cooked thoroughly.
6. Cool slightly and using a hand held blender puree the mixture until smooth soup.
7.Season with salt and pepper.
8.Serve in soup bowls with a sprinkling of fresh coriander and a drizzle of fresh cream with crusty bread.
