Summer Smoked Trout Salad

Method

  • 1)Put the peas, courgettes and asparagus in a saucepan filled of water. Bring to the boil and simmer for 4 -5 minutes.
  • 2)Drain and refresh under cold water to prevent further cooking and to retain the colour. Allow to cool for 10 minutes.
  • 3)Put the vegetables in a large salad bowl, add the blueberries and mix in the mixed salad leaves. Flake the fish and mix carefully.
  • 4)For the dressing combine all the ingredients together.

  • To serve the stylish way: Plate the salad into individual portions. Drizzle over some dressing and serve immediately.

    • 4 large fillets of smoked trout skinned
    • 225g asparagus tips cut in ½
    • 2 cups shelled fresh or frozen peas
    • 2 courgettes sliced in circles
    • 200g fresh blueberries or raspberries
    • 225g bag of mixed salad leaves
    • 2 tbsp Dressing: mayonnaise
    • 2 tbsp extra virgin olive oil
    • 1 tbsp sesame oil
    •  Salt and freshly ground black pepper
