Matilda's Middle Eastern Rice and Broad Beans

Method

  • Prepare all the ingredients - 1 x cup full of rice, freshly chopped coriander x 1 bunch, chopped cloves of garlic.

  • Put a generous portion of olive oil into a heavy-based pan, and add in your chopped garlic and all of the broad beans. Cook gently on the heat (low-medium). A delicious smell fills the room! If you like garlic, add some more.

  • Next, add in your cup of rice, along with sufficient water, and bring to the boil, before simmering gently on a low-ish heat over the next 1/2 hour or so.

  • Finally, add in lemon juice from fresh lemon.

  • Serve with whatever meal accompaniment you like. A delicious and healthy meal!

    • 1-2 cups broad beans
    • 3-4 cloves garlic
