1. Mix the chopped red onion and mince together in a bowl.
2. Add in the coriander, chilli (optional and the hotter you like it the more chili you add), garlic and Worcestershire sauce and mix together.
3. Add in the egg to bind. Season with lots of pepper and mix well with your hands.
4. Take the mixture and form into hand sized rounds, pressing each one firmly together.
5. Now place the burgers on a plate, cover with clingfilm and leave in the fridge until you're ready to cook them. You can shape the burgers the day before and chill overnight.
6. Bring up to room temperature before cooking. When the barbecue is good and hot, brush the grill with a little oil to prevent the meat sticking to it, and give the burgers a light coating of oil, too. Grill them for 4-6 minutes on each side, depending on how you like them.
