Method

  • Meat and sauce:
  • 1) Preheat the oven to 220C. Heat half the oil in a large saucepan.
  • 2) Season the flour with the salt and pepper. Lightly coat the beef and fry in batches until golden brown. Remove and place in a casserole dish.
  • 3) Add the remaining oil and brown the vegetables, adding the caster sugar. Remove and add to the casserole dish.
  • 4) Add the stock to the saucepan and deglaze. Pour into the casserole dish. Add the wine and bay leaf and cook, covered, for 1 1/4 hours.

  • Cobbler:
  • 5) Sift the flour into a mixing bowl and season. Rub in the butter and mustard.
  • 6) Add the parsley and 3/4 of the grated cheese.
  • 7) Mix the egg, milk and horseradish together in a separate bowl. Fold the egg mixture into the flour mixture.
  • 8) Remove the casserole from the oven. Divide the cobbler mix into 8 portions and place on top.
  • 9) Top with the remaining cheese. Increase the oven heat and bake for 25-30 minutes until the cobblers are golden brown.

    • 900g braising steak (cut into chunks)
    • 300ml beef stock
    • 600ml red wine
    • 2 onions (chopped)
    • 2 large carrots (chopped)
    • 1 small leak (chopped)
    • 1 clove garlic (grated)
    • 6 tbsp vegetable oil
    • 2 tbsp plain flour
    • 1 tsp salt
    • 1 tsp black pepper
    • 1 bay leaf
    • ½ tsp sugar
    •  
    • COBBLER:
    • 225g plain flour
    • 225g cheddar cheese (grated)
    • 25g butter
    • 2 eggs
    • 2 tbsp milk
    • 1 tbsp fresh parsley (chopped)
    • 1 tsp mustard
    • 1 tsp horseradish
