Method

  • 1.Place the ginger, chilli, garlic, coriander, 1 tbsp oil, lime zest and half the juice in a food processor to make the paste.

  • 2. Preheat the oven to 200°c.

  • 3.Loosen the skin and breast by push your fingers gently, be careful not tp break the skin. Using a tea spoon or fingures, spread the paste over the breast meat under the skin, until covered.

  • 3.Place the chicken in a roasting tin. Rub with the remaining oil and season. For a 1.5kg u need to cook it around 1h30 - 1h45. You can insert a fork to see if it still pinky.

  • Serve with roasted potatoes and green salad.

    • ½ tsp Ginger root peeled and chopped
    • 2 red chillies chopped
    • 2 garlic cloves peeled
    • 20g fresh coriander chopped
    • 1 lime zested and juiced
    • 1 (1.5- 2 kg) Whole chicken
    • 2 tbsp olive oil
