1.Place the ginger, chilli, garlic, coriander, 1 tbsp oil, lime zest and half the juice in a food processor to make the paste.
2. Preheat the oven to 200°c.
3.Loosen the skin and breast by push your fingers gently, be careful not tp break the skin. Using a tea spoon or fingures, spread the paste over the breast meat under the skin, until covered.
3.Place the chicken in a roasting tin. Rub with the remaining oil and season. For a 1.5kg u need to cook it around 1h30 - 1h45. You can insert a fork to see if it still pinky.
Serve with roasted potatoes and green salad.
