Maureen's Banana Bread

Ingredients

  • 50 grams or 125 milliliters Chopped Nuts (optional)
  • 60 grams or 62.5 milliliters Butter or Margarine
  • 225 grams or 250 milliliters Banana Pulp
  • 2 (large) Eggs
  • 3 milliliters Salt
  • 2 milliliters Bicarb of Soda
  • 130 grams or 160 milliliters Sugar
  • 10 milliliters Baking Powder
  • 210 grams or 430 milliliters Cake Flour

Method

1. Sift together the dry ingredients.
2. Stir in the egg, banana pulp, butter and nuts. Do not overmix.
3. Pour the batter into a 100 millimeter by 200 millimeter greased and floured bread tin.
4. Bake for 1 hour at 180 degrees celsius.
5. Remove from the oven, allow to cool, remove from baking tin and serve.

This is just delicious served warm and fresh out of the oven with a light spreading of butter. Not terribly healthy or slimming I know but hey..... give it a go!

The Story Behind The Recipe

This was a treat that mum used to make for me when I was a kid and was one of her specials. Any time we had bananas left over that were just getting over-ripe, mum would mash them up and put them into her fab banana bread. This was and excellent snack especially good for me when I got home from school as it would keep me going until dinner time. Later mum would cook one for me and stash it in my bag before I left to go back to boarding school on Sunday evening. It was always a great and pleasurable surprise to open my bag on the Monday at school and find a fresh (sometimes still warm) loaf of banana bread waiting for me.
