Method

  • Heat oil in large frying pan over medium heat. Add garlic and stir until it begins to colour.
  • Add raisins and pine nuts and stir for 1-2 min.
  • Stir in spinach, adding small amounts at a time as it wilts. Season with salt and pepper. Cover pan and leave spinach to cook about 5 min until it's all wilted.
  • Ingredients

    • 600g fresh spinach leaves
    • 1 clove garlic
    • 1 ½ Tbsp olive oil
    • 75g raisins
    • 4 Tbsp pine nuts
    •  salt and pepper
