Method

  • Preheat oven to 350 F.
  • Rinse barley in cold water and drain.
  • Heat butter in saucepan and brown pinenuts. Once browned, remove from pan and keep in bowl to the side.
  • In same pan (now emptied), sautee green onions and barley, until just toasted. Remove from heat and stir-in nuts and parsley.
  • Pour heated broth over barley mix. Put everything into a large casserole dish and bake uncovered for 1 hour.
  • Ingredients

    • 1 cup Pearl barley
    • 6 Tbsp butter
    • 1/3 cup pinenuts
    • 1 cup chopped green onion
    • ½ cup chopped parsley
    • 3 ¼ cups chicken broth

    I had this at a dinner party and had to have the recipe after!! Could eat the entire dish it's so delicious!
