Banana Loaf

The Basics

Ingredients

  • 5 oz  self raising flour
  • ¼ tsp.  bicarbonate of soda
  • 2 "ripe" bananas
  • 4 oz  soft butter or margarine
  • 2 eggs
  • 10 oz  sugar
  •  1/2 tsp. vanilla essence
  • Pinch of  salt

Method

Place the eggs, bananas, sugar, butter and vanilla essence and salt in the liquidiser and blend on speed 3 to a smooth consistency. Sieve the flour and bicarbonate of soda into the bowl and pour the liquidised mixture over. Mix on speed 2/3 moving the beaters through the mixture just long enough to combine thoroughly. Bake in a 2 lb loaf tin which has been greased, and line the bottom with greaseproof paper. Bake for approx 40 minutes or until cooked at 375 degrees F, 190 degrees C, Gas Mark 5.
