Catch of the Day - Grilled Halibut Steaks

Method

  • 1. Put the chopped tomatoes into a bowl.

  • 2. Add the basil, olive oil and vinegar, mix well, and set aside.

  • 3. Rub the fish with oil and season with salt and pepper to taste. Grill or bbq the fish for 5 minutes per side, until flesh is opaque through the center.

  • 4. Add the lemon juice and garlic to the tomato mixture, and mix well. Spoon sauce on a plate and place a fillet on top of the sauce.

    • 4 Halibut Steaks
    • 3 Large Ripe Tomatoes Chopped
    • 2 Tbsp Fresh Basil Chopped
    • 3 Tbsp Extra Virgin Olive Oil
    • 1 Tbsp Balsamic Vinegar
    • 1 Fresh Lemon Juiced
    • 1 Clove Garlic Pressed
    •  Seasoning - Salt and Freshly Ground Black Pepper
